Pasta Pesto alla Genovese

  • Have you watched the Disney movie "Luca" yet? I'm really curious about one menu in the film. Pasta Pesto alla Genovese. How come the food is so delicious, it's really delicious I tried to make it today but because my husband is a meatlover, I serve it with extra topping Grill Chicken. Wow, I really like it… It's not bad, it's tasty, it smells like basil. And add grilled chicken, perfect Greetings "Anyone can cook"
  • Ingredients
  • 250 grams of dry pasta according to taste such as linguini, spaghetti
  • 6-8 sticks (50 grams) baby chickpeas, cut into 2.5 cm
  • Pesto (I've shared the recipe)
  • 1 potato, diced 1 1/2 cm
  • 2-3 tbsp pesto, add 2 tbsp first
  • according to taste Parmesan cheese
  • Grilled Chicken:
  • 2 chicken thigh fillets
  • 200 mL UHT white milk
  • 1/2 lemon or lime
  • 1 tsp salt
  • Spice Grill Chicken Seasoning:
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Paprika or cajun powder
  • 1/2 tsp Garlic powder or onion powder, you can add if you like it more fragrant
  • 1/2 tsp dry parsley
  • Step
  • 1. For grill chicken: soak chicken in milk, lemon/lime and salt for at least 1-2 hours. Drain and season with salt, pepper, paprika/cajun and garlic powder evenly. Bake in the oven or air fryer for 20-22 minutes at 180oC. Check doneness. Set aside and cut according to taste, ready to serve. Boil a pot of water quite a lot. Add 1 tbsp salt. Boil potatoes and chickpeas with pasta. As long as it fits the packaging. Different pasta can be different. Drain well.
  • 2. Leave a little pasta water left over from boiling. In a bowl, add the boiled pesto and pasta. Stir well. Add enough pasta water to make it easier to mix. Top with parmesan cheese as much as we like. Serve with Grill Chicken. For 2 servings
