Pasta Pesto Avocado

  • I've been wanting to try pesto pasta for a long time. Let's experiment with the ingredients we have at home.
  • Ingredients
  • 150 g gluten free pasta (free)
  • 1/2 tbsp Coconut oil
  • 1 tsp sea salt
  • 500 ml water
  • Toppings
  • 1 ripe avocado
  • 2 cloves of garlic
  • 2 tsp parsley powder
  • 1 tsp basil powder
  • 2.5 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • enough Pepper
  • Nuts for sprinkling (I used walnuts)
  • Step
  • 1. Boil pasta with water, add salt and coconut oil to prevent sticking. Once cooked, drain.
  • 2. Blend all the topping ingredients (or crushed, chopped and mixed with a spoon too).
  • 3. Mix toppings with pasta, sprinkle with nuts (or nuts can also be blended)
  • 4. Pasta pesto is ready to serve
