Vegan + Gluten Free Pesto Spaghetti

  • Ingredients
  • 2 cups basil (use leaves and small stems only)
  • 2 tbsp mashed cashews (already in the oven/roasted before)
  • 6 cloves of garlic
  • 3 tbsp nutritional yeast
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • 3 tbsp boiled water
  • 1/4 tsp salt (to taste)
  • Other Ingredients
  • pinch of pepper
  • pinch of sugar
  • Gluten free spaghetti
  • Sauteed Tomatoes and Mushrooms (complementary)
  • Step
  • 1.Blend basil, cashew, lemon water, nutritional, olive oil, garlic, boiled water, salt until evenly distributed.
  • 2. Cook spaghetti until done. Set aside about 150 ml of pasta water.
  • 3. Put the spaghetti into a non-stick Teflon, then add the pesto seasoning. Stir well on low heat. Add sugar, salt, pepper to taste.
  • 4. Serve with toppings, good luck!
